Peanut Butter Cookies

These cookies are delicious and super quick and easy to make!

Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: Makes 2-3 dozen

INGREDIENTS:

1 cup peanut butter
1 cup packed brown sugar
1 large egg
1 tsp baking soda

DIRECTIONS:
  1. Preheat oven to 350
  2. In a bowl, beat together all the ingredients until smooth and well blended
  3. Drop on to an uncreased cookie sheet by rounded tsp
  4. Bake about 10 minutes
  5. Clean up and enjoy!

Monster Cookies

These cookies taste amazing and are a little bit of everything! Chocolate chips, M&Ms, nuts and more!

Prep Time: 15 minutes
Cook Time: 10 minutes
Servings: Makes 3-4 dozen

INGREDIENTS:
3 egg
1 cup white sugar
1 cup brown sugar
1 stick of softened butter
1 1/2 cup of peanut butter
= mix until smooth

2 tsp baking soda
3/4 vanilla
4 1/2 cups of oatmeal
2/3 cups of m&m
2/3 cup of chocolate chips
= mix together separately then add to above

DIRECTIONS:
  1. Preheat oven to 350 degrees
  2. In a medium mixing bowl, mix together the first five ingredients until smooth. In a seperate bowl mix the last five ingredients then add to the first bowl.
  3. Bake in preheated oven for ten minutes. Be sure to take them out BEFORE you think they're done!
  4. Clean up and enjoy!

Baked Haddock

This lightly breaded haddock (or other white fish), is quick and easy to prepare, and tastes heavenly.

Prep time: 10 minutes
Cook time: 15 minutes
Servings: 4 or 5

INGREDIENTS:
3/4 cup milk
2 teaspoons salt
3/4 cup shredded gluten-free white bread (the one from stop&shop after freezing it works well)
1/4 cup grated Parmesan cheese
1/4 teaspoon ground dried thyme
4 haddock fillets
1/4 cup butter, melted

DIRECTIONS:
  1. Preheat oven to 500 degrees F (260 degrees C)
  2. In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and Thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. place haddock fillets in a glass baking dish, and drizzle with the melted butter.
  3. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

Strawberry Delight

This is an extremely easy and quick snack, but it could also be a nice light lunch or even a dessert! Here is what you'll need:
  • One 6 oz. countainer of strawberry yogurt
  • about 5 Cups of whipped cream
Ok, so maybe you don't need five cups... four would probably do it. ;)
